Friday Fun and Some Kick Ass Irish Soda Bread

Hello All and Happy Friday and St. Patrick’s Day!

Whoo hoo! It’s Friday baby!

Ok, here is your Friday Fun clip featuring Melissa McCarthy as a guest on the Ellen show.  enjoy.

Now that you’ve had a good chuckle here is the recipe for delicious Irish Soda Bread that I grew up with:

Irish Soda Bread

Ingredients:  (makes 1 loaf)

2 cups of flour

2 teaspoons of baking powder

1/2 cup of sugar

1/4 stick of margarine

1/2 cup (or more depending on your taste) of raisins

1 egg beaten with enough milk to make 1 cup

To Make:

preheat oven to 375

grease loaf pan (I use those disposable foil pans. You can also use a round cake pan, up to you.)

Mix together flour, baking powder and sugar.  Add raisins, mix well.  Cut in margarine, using your fingers to incorporate margarine into mixture. (This is my least favorite part as I have a thing about getting my fingers messy. It’s a OCD thing.  My dad was big on washing our hands whenever we came home, “get the aids off” – as if you could simply wash the aids away, that would nice. But I digress, back to the recipe.)  Add egg/milk mixture to dry ingredients and stir well.  Batter may seem stiff but keep mixing dry and wet ingredients together.  Pour into greased loaf pan.  Make a well in top of loaf.

Bake at 375 for 50-60 mins.  Cool on baker’s rake.  Enjoy with butter and jam.  Yum.
