Thank God its Friday!

Midweek holidays really throw me for a loop!  It was great not having to get up at 5am on Wednesday, but it did make the rest of the week feel a little off.  Don’t you think?

Thankfully, though it is FRIDAY!! Yeah!

Friday Fun and Some Kick Ass Irish Soda Bread

Hello All and Happy Friday and St. Patrick’s Day!

Now that you’ve had a good chuckle here is the recipe for delicious Irish Soda Bread that I grew up with:

Irish Soda Bread

Ingredients:  (makes 1 loaf)

2 cups of flour

2 teaspoons of baking powder

1/2 cup of sugar

1/4 stick of margarine

1/2 cup (or more depending on your taste) of raisins

1 egg beaten with enough milk to make 1 cup

To Make:

preheat oven to 375

grease loaf pan (I use those disposable foil pans. You can also use a round cake pan, up to you.)

Mix together flour, baking powder and sugar.  Add raisins, mix well.  Cut in margarine, using your fingers to incorporate margarine into mixture. (This is my least favorite part as I have a thing about getting my fingers messy. It’s a OCD thing.  My dad was big on washing our hands whenever we came home, “get the aids off” – as if you could simply wash the aids away, that would nice. But I digress, back to the recipe.)  Add egg/milk mixture to dry ingredients and stir well.  Batter may seem stiff but keep mixing dry and wet ingredients together.  Pour into greased loaf pan.  Make a well in top of loaf.

Bake at 375 for 50-60 mins.  Cool on baker’s rake.  Enjoy with butter and jam.  Yum.

Friday Fun

Well it’s finally here, FRIDAY!!!! 

Thank God!  What a week.  I need it to be Friday, I just have to get past this pesky 9 to 5 job and I’m good to go.  What do you have planned for the weekend?  Out with friends, DIY projects for the house?

I will be watching my son’s last regular season hockey games on Sat and Sun.  Sad to see the season end it has been so much fun.  His team made it to the Tier II State Championships which is kind of a big deal, so looking forward to going in two weeks.  Here’s a pic of the little buggers celebrating their achievement.

I’m also going to try to catch up on my “40 Bags in 40 Days” project that I have been neglecting lately.  Not by choice, I’ve just been really busy and really, really tired.  Sorry excuse, I know. I have to step up my efforts.  I’ve started in the kitchen and already have 2 bags. It’s a start.
