Friday On My Mind
Oh thankyou Lord! It is finally Friday. It has been an excruciatingly long week for me. I don’t know why, but this week I have been extremely tired and I’ve been getting to bed by 10pm, so I don’t know what’s going on. I’m just relieved the work week is over.
One thing I did do this week which has helped to ease my stress, was to create a meal plan for the week. I picked out what I was going to cook for the week last Sunday and made sure I had all the ingredients I needed, weeknights have been a breeze. Some of the meals were hits, some not so much but that’s ok. At least I wasn’t staring into the refrigerator abyss at 5 o’clock wondering what I was going to make for dinner. I got home, looked at the calendar and made dinner. Easy, peezy.
My daughter, Emily is making dinner tonight: frozen ravioli with sauce. Simple but it’s a start. I want my kids to learn how to cook a few meals for themselves to get them on the road to independent living. My eldest, Fiona, will be going to college after this year so I really need to get things going. Em is my first volunteer, she’s such a good kid. I’m going to try to have the kids rotate and make one meal a week. They will be in charge of the whole thing, planning, choosing a recipe, shopping for ingredients and cooking. I’ll let you know how it goes.
